As of m y knowledge, you can't control the field selection as per sales organization.

You can control it as per plant or industry sector.

For Plant:

In OMSA, Select s different field reference for your plant.

Then in OMS9, make these fields as hide or display (as per your requirement) for this field reference (0002).

Then check as per plant.
